Recipe | Coconut Blueberry Super Porridge


There's no way better way to start you day than with a big 'ole bowl of warm porridge. Mmmm, I'm lovin' it. Over night oat bowls have become really popular, but who realistically remembers to soak their breakfast before bed? You too eh? You've got antioxidants from the blues, protein in your peanut butter and omega -3 in the pumpkin seeds for your brains kick start. This delicious bowl of creamy coconut goo screams Caribbean with sharp pops of blueberry goodness bursting out at you! Good morning!

  • 1     Cup oats
  • 1     Teaspoon sugar
  • 1     Tbsp peanut butter
  • 1     Tbsp pumpkin seeds
  • 1     Handful of fresh blueberries
  • 1/4  Cup soya milk (or water)
  • 1/4  Tea spoon cinnamon & Ginger 
  • 1/4  Cup coconut milk/cream
  • 1/4  Cup crushed walnuts


  1. Keeping the blueberries and pumpkin seeds separate, mix all remaining ingredients into a small saucepan.
  2. Cook on a medium heat to desired consistency of porridge. The longer you cook, the thicker it shall be. Add more water if it's too thick for you.
  3. Serve with berry and seed toppings and a sprinkle more of ginger and cinnamon.
