Recipe: Butternut Squash Crisps

So I had a lot of off cuts from my squash after we roasted it's fleshy goodness with a whole bunch of other vegetables. I'm not one to waste things though and I especially hate throwing food away. I wondered what I could do with the skin?! Yeah, I mean I could have roasted it with the skin on. Sometimes you just want some smooth, skinless squash you know what I'm saying?



I decided to make fries with them, so I could snack on them in a moment of weakness. That would mean avoid hitting up the convenience store (spar) for their chocolate stash. Safe to say it worked! Clean eating streak saved for another day! Hahaha. They're really, really simple to make. You have to try these, they taste just like walkers roast chicken crisps. Chicken is my favourate flavour for everything. You could use vegetable stock instead of course! 


Peel and wash your butternut squash. Rub a tablespoon of oil in with a sprinkle (half a teaspoon) of chicken stock, salt & pepper. Once this is all well mixed, roast in the oven for 10 - 15 minutes on 180 degrees. Bam, you just made a healthy snack. 

You can eat them as they are hot, which is really a treat. Or wait for them to cool, bag them up and eat them on the go!
