Banging Banana Omelette

Hey! It's Sunday, one of my favourite days of the week. The best day for experimental cooking. I always like to be up early and see the sun get in, use the time to reflect and plan for the week; that's a perfect Sunday for me. My little brothers started back at school this week, it's a big year for both of them. One starting high school and the other on his A-level journey. So I made them this as a sweet lucky charm, I think I set them up for a pretty good first day!

I'm about to head out for a run, but before I do, I need to get in some proteins and good carbs. This is one of my favourite sweet dishes. Banana pancakes/omelette. It may sound a little crazy, but trust me, this dish is banging.


Recipe
Ingredients
- 1 banana
- 2 eggs
- Handful of fruit to top
- Nutmeg

Method
1 - In a bowl, mash up your banana with the back of a fork. You'll want to form a gooey banana paste. Mmmmm, haha.
2 - Crack in your 2 eggs. PLOP! Give that a whisk with your fork.
3 - Lightly oil a pan with olive oil or butter, on a medium heat. 
4 - Cook your mixture for about 2 minutes, sprinkle over some nutmeg. Or if you like cinnamon!
5 - Chop up your fruits.
6 - Slide that banana bad boy onto your plate, top with all kinds of fruit and a spring of mint if you're fancy.
